Gradually add oat flour, 2 Tbsp at a time, until the mixture is thick and rollable.
Roll mixture into 1-inch balls using your hands.
Optional: Roll bites in coconut, nuts, or cocoa powder for extra texture.
Chill in the fridge for 30 minutes to firm up.
