Vegan Peanut Butter Balls

Ingredients

  • 1 can 15 oz chickpeas, drained and rinsed
  • ½ cup natural peanut butter no added sugar or oils
  • 5 –6 Tbsp maple syrup
  • 6 Tbsp almond milk
  • ½ –⅔ cup oat flour adjust for texture
  • Shredded coconut

Instructions

  • Add chickpeas to a food processor and blend until smooth.
  • Add peanut butter, maple syrup, and almond milk. Blend again until creamy.
  • Gradually add oat flour, 2 Tbsp at a time, until the mixture is thick and rollable.
  • Roll mixture into 1-inch balls using your hands.
  • Optional: Roll bites in coconut, nuts, or cocoa powder for extra texture.
  • Chill in the fridge for 30 minutes to firm up.

Notes

Storage:

  • Store in an airtight container in the fridge for up to 1 week.
  • Freeze for up to 3 months — just thaw in the fridge before snacking.

Snack Tip:

Try swapping peanut butter for almond or sunflower seed butter to switch things up.
